- 60 g flour

- In a very hot pan, Brown the steaks and bacon in 3-4 batches. Deglaze the pan with stock or wine.
- Put seared steaks, carrots, onions, celery, bay leaf, Potatoes, garlic and stock in slow cooker. Fill with water to completely cover ingredients. Cook on low till beef is tender, minimum 2 hours.
- Meanwhile make your roux (thickener) mix flour and butter together to a paste
- Find your flavor balance using more or less of soy (for salt) bbq (smoky/sweet) tomato (umami/sweet)
- Bring stew to a gentle boil, and pinch several little 1/2 teaspoon bits of roux into stew. Mix through well and repeat to desired thickness.
- Serve with rice, pasta, lentils (like in picture) or just a tasty loaf and butter.
