- 1 teaspoon garam masala powder

- 1 or 2 each Bay leaf,cloves,cardamoms
- 1 green chilli slit
- 1 teaspoon cumin seeds
- a pinch of asafoetida powder,
- Slurry:(1 teaspoon each)
- Turmeric, red chilli and cumin powders Ginger-garlic paste, 2 tablespoon water
Steps to make to make Tomato Curry
- Heat the oil in a wok
- Add the tempering ingredients one by one and wait for the seeds to splutter
- Once done, add and sauté the onions until translucent
- Meanwhile create the slurry and keep it ready
- Once onions are done, add the slurry and cook covered until oil separates
- Then add in the tomatoes followed by salt. cook covered until they turn mushy
- Once almost done, roughly mash the potatoes and add them now
- Mix well and add some water good enough to bring the gravy to desired consistency
- I like my curry dry, so it took roughly 10 minutes to cook.
- To finish, add a dash of sugar, coriander leaves and garam masala powders(add a dash of kasuri methi for that extra flavour, if desired)
- Mix well and take off heat.
- Serve our lovely tomato curry with pooris, chapatis, parantha, etc. Enjoy!
